Epic Mediterranean Pita Sandwiches with Shish Taouk Tofu
Part Greek, part Lebanese, and wholly delicious, this Mediterranean fusion dish comes together in under 20 minutes for a healthy and satisfying WHF lunch or quick dinner. If you're fresh out of pitas, this makes an equally delicious meal salad.

Ingredients
- 1 package Epic Shish Taouk Marinated Tofu Chunks
- 4 TBSP extra virgin olive oil, divided
- 2 tomatoes, chopped
- 1 English cucumber, chopped
- 1 small red onion, sliced into rounds
- 1/2 head romaine lettuce, chopped
- 1/2 TSP dried oregano or 2 TSP fresh oregano, finely chopped
- Juice from 1 lemon
- 1 cup tzatziki
- 6 pitas
- S&P to taste
Preparation

In a large non-stick pan, heat 1-2 TBSP of olive oil over medium-high heat. Add the Epic Shish Taouk Tofu and cook, stirring occasionally, for 7-8 mins—until golden. Remove from heat.

In a large bowl, combine tomatoes, cucumber, lettuce, and onion. Drizzle with lemon juice and 2 TBSP olive oil & stir to combine. Season with oregano and S&P.

Serve family-style and build your own pita sandwich, adding tofu, salad and tzatziki.
